Thecha


Thecha is a Maharashtrian chutney. It is very much popular in Maharashtra. Thecha is loved by spicy food lovers.

Ingredients : Green Chillie 15-20  Pieces

Garlic 10 cloves

Peanut 50 grams

cumin seeds 1 teaspoon

mustard oil 1 teaspoon

Salt to taste

Lemon 1 (optional)


Method : wash and dry and cut the green chilies. put oil in the pan and heat the burner. add cumin seeds and garlic cloves and roast for few seconds. Now add the green chilies and roast for 3 minutes. After green chilies now add the peanuts and salt and roast for 4 minutes in slow flame. Finally switch off the flame and put this mixture in a blender or a mortar and pestle .It tastes authentic when it is grounded on a mortar  and pestle. If you don't have mortar and pestle no worries rough bled it on a blender. Thecha is ready. You can have it with rice, chapati or anything. You can store it up to 15 days in a refrigerator.  If you like sour taste add the lemon juice or you can leave it.  You can use any oil but mustard oil tastes better.

Blue Pea(Clitoria Ternatea) Drink




 

Clitoria Ternatea  is also known as butterfly pea, Asian pigeonwings. In India it is known as Aparajita flower. It is offered to Goddess Durga. This drink is very refreshing and healthy.

Ingredients : Blue pea flowers 8-10
 Water - 2 Glass
Sugar 4 Spoons (according to your taste)
Black salt a pinch
Lemon 2 
Ice cubes

Method : Wash the flowers and remove the green parts . In a pan keep the water for boiling.  after boiling the flowers the water will turn into blue colour keep the water for cooling. When the water cools strain the water and remove the flowers. Now mix the sugar into the water . then squeeze the lemons in the water. add the black salt and serve with the crushed ice. 





Yam Woon Sen

Yam woon Sen is very much popular in Thailand. My style of Yam Woon Sen is super easy. One of my Thai friend once told me this recipe then I tried it and it became super tasty. 



 Ingredients : Glass Noodles 1 Packet

Carrot 1 long thin chopped

Cucumber 1 Finely Chopped (Optional)

Tomato 3 long thin chopped

Celery 1 Bunch Finely Chopped

Coriander Leaves 1 Bunch Finely Chopped

1/2 Cup Roasted crushed Peanuts

salt or soya sauce according to taste

Dressing : Tamarind Pulp 3 tablespoon

Sugar syrup 1/2 cup

Lemon juice 2 Table spoon

Red Chillie powder 1 teaspoon

Red and green chillie finely chopped

Method : Boil the Noodles. Glass noodles doesn't take much time for boiling. You can boil the carrots with the noodles together so that the noodles won't stick with each other. While boiling the noodles add some oil in the noodles. After boiling the noodles immediately pour the normal water in the noodles. after the noodles cool down add all the ingredients in the noodle and mix them well. Now add all the dressings in the noodles and make the noodle sweet and salty according to your taste. Yam Woon Sen is sweet, salty, spicy, and sour in taste. Make it according to your taste. and enjoy the yummy noodle.

Chakli (Murukku)




 Chakli is loved by almost everyone. Today I am going to post the most easy and simple recipe of chakli.

Ingredients : Whole wheat floor 500 Grams
Gram flour - 5 Tablespoon
Curd - 1 Cup
Green Chillie 4-5 Pieces
Ginger  a little
Sesame Seeds - 2 Tablespoon
Turmeric powder 1 Teaspoon
Red Chillie Powder - 1Teaspoon
Chat Masala - 2 Teaspoon
Oil for Frying
Salt to Taste
Method : Take the whole wheat flour and gram flour together. Place both the flours in a cotton cloth and tie the cloth with the help of a rubber band. Make a bundle and place it for steaming. heat the burner. In a pressure cooker put some water below and place a small bowl on the water .Put the flour bundle on the top of the cooker. Keep in mind that the water should not touch the bundle. Cover the pressure cooker with the lid and let come 3-4 whistle. When the pressure cooker cools down take out the flour bundle. When the flour is cooled  try to make it fine because it will get harder because of the steam. place it in a food processor and dry blend it and make fine flowing flour. Make chillie and ginger paste. Now mix all the ingredients in the flour and make a soft dough. In the mold place the dough and make in round shape. I usually make long plain lines in the platform then I make it round shape and put it in the hot oil for frying. After some time I slow down the burner a little to make it crispy. yummy Chakries are ready.

Chillie Pickle (Hari Mirch Ka Achar)


 Ingredients: Green Chillie 50 Grams

Lemon - 5 -6 Pieces(Lemon Juice)
Mustard  seeds  - 4 Tablespoon(Grounded)
Turmeric powder 1/2 Teaspoon
Salt 2 Tablespoon
Powdered Fennel seeds 1 Teaspoon
Powdered fenugreek Seeds 1 Teaspoon

Method: Wash the green chilies and dry them with the help of a cotton cloth. In a bowl mix all the spices. Cut the chilies from the middle. Fill the mixed spices in the middle of the chilies. Keep in a jar and pour the lemon juice from the top in the jar. Chillie pickle is ready. Keep it in the refrigerator to keep it fresh for a long time.
