Mathri (Indian Snack)

Mathri is also known as suhali in many parts of India. Mathri is very much popular in India. loved by elders and kids also. 

Ingredients: 500 Grams all-purpose flour
100 Gram oil
1teaspoon carom seeds
1 teaspoon black cumin seeds
100 Gram whole wheat flour
50 Gram Semolina(Suji)
Oil for deep frying
Salt to taste

Method: Mathri can be made by different methods. Many people don't use whole wheat flour. But my sister-in-law makes a healthier version and she uses whole wheat flour.
Take a big bowl. Put all-purpose flour in the bowl. Mix whole wheat flour and semolina in the all-purpose flour. Then add the salt, carom seeds and the black cumin seeds in the flour and mix all well. Now add the 100 grams of oil to the flour and mix it with the help of both hands. Add lukewarm water and make a dough. Then make small balls and roll the whole and make very small bread (puri) as shown in the picture. Then make small wholes in the mathris. Finally, Heat the oil and deep fry the Mathri. The Yummy Mathri is ready. You can enjoy the Mathri with tea, Pickle and sauces.

Boiled Tomato Chutney





 Ingredients :  Tomatoes

Garlic 3 Cloves

Green Chillie 3

Coriander Leaves a Little

Lemon 1/2 

Salt to taste

Roasted crushed Peanut 1 tablespoon(Optional)

Seasoning : Curry leaves 

Mustard oil 1 Teaspoon

Mustard seeds 1/2 Teaspoon

Method : This chutney is very easy to make and it tastes super yummy. Boil the tomatoes.in a food processor put the boiled tomatoes ,garlic, green chillie and the coriander leaves. Roughly blend the ingredients and make a rough paste. Then place the paste in a bowl. Heat the mustard oil and add the mustard seeds in the oil. When the seeds began to crackle add the curry leaves. Now the seasoning is ready. Pour the seasoning in the tomato paste. add the salt . If you like more tangy taste add the lemon juice. Finally add the roasted crushed peanuts. The chutney is ready.




Kuey Teow Nam Soup(Rice Noodle Soup)



Ingredients for Soup: Ash Guard 1/2 Piece
Radish - 1/2 Piece
Carrot 1/4 Piece
Baby Corn 2-3 pieces(Optional)
Knorr Broth 1 Cube
Coriander Stem 3-4
Dressing :Red and green chilies finely cut
Soya Sauce 1/2 cup
Vinegar 1/2 cup
Sugar 3-4 tablespoon
Crushed and roasted Garlic (Optional)
Roasted Peanut 1/2 cup
Lemon Cubes some
Bean Sprouts some
Fried Soya Chunks
Red Chillie Flakes
Finely Chopped coriander and the spring onions
Finely chopped cabbage(Optional)

Method : Rice Noodle is the best choice for this Recipe .Soak the rice noodle for some time. Take a big pan Place it in the burner. Boil water in the pan. Peel the skin of the ash gourd, radish and the carrot. make small dices and put in the water for boil. cut  the baby corn and wash the the coriander stems and put both in the hot water. Add the broth and salt in the soup and let it boil .It will take time to make the soup.
Mean while we will ready our dressing. In a tray take small small  beautiful bowls. keep all the dressing ingredients separately in each bowl. In soya sauce and vinegar put the chopped red and green chilies. In a bowl keep sugar ,roasted garlic and peanut. Don't forget the soya chunks .if you have some crispy flat wafer you can keep this also.
When the soup is about to ready and if you are about to have your meal then that time in another pan keep some plain water to boil. when the water starts to boil put some noodles and some bean sprouts in a strain and place in the boiling plain water. In about 3-4 minutes the noodle and the sprout is well cooked and ready to eat. Now comes the final part , which is dressing. In a bowl place the cooked noodles and the bean sprouts the add the hot boiling soup in the bowl. Then add all the dressings according to your choice. and have the yummy rice noodle soup. This is my type of Kuey Teow Nam soup.
Tip : if you don't have ash gourd you can use bottle gourd.

Without Onion Garlic Lady Finger Curry

Ingredients: Lady Finger 500 Grams
Tomato 5 Whole
Mustard oil 3 Tablespoon
Turmeric 1/2 Teaspoon
Red Chillie Powder 1/2 Teaspoon
Curd 1/2 Cup
Roasted Gram Flour 2 Tablespoon
Cashew Nuts 6 Pieces
Salt to Taste 
Dressing: Chopped green chillies
Ginger Juliennes
Coriander Leaves

 For Seasoning: Mustard Seeds1/2 Teaspoon
Cumin Seeds 1/2 Teaspoon
Red chillies Whole 4 Pieces
Bay Leaves 2 Pieces

Method: Boil the Tomatoes. Peel them and keep them aside. In a big pan take the mustard oil and let the oil heat. then put the ladyfinger in the hot oil. add the little salt and cover it for some time. Keep in mind that the Ladyfinger should be green in colour. After the ladyfinger becomes a little soft or you feel like it is perfectly fried take them off from the pan. Now In a food Processor Put the Tomatoes and the Cashew nuts and blend them and make a smooth puree. In a pan add little oil and let the oil for heating. Then add the puree and let the puree for cooking . after some time when the puree is well cooked or it began to release the oil from the sides now in a pan take the curd and the gram flour and mix them with the help of a whisker. Now add the curd mix in the puree and let the mix for cooking. add the salt, sugar red chilies powder and turmeric powder. after the mix began to boil switch off the flame. In the serving bowl put the ladyfinger first then add the gravy in the pan. Then sprinkle the Kasoori Methi from the top. Now comes the main part of the curry which is seasoning. take any oil of your choice. Heat the oil then add the Mustard and the cumin seeds then the bay leaves and the whole red chilies. when the mustard seeds began to pop up/crackle take the seasoning off from the flame and pour in the curry. Garnish with ginger julienne, green chilies and coriander leaves. The Yummy curry is ready.










 

Wing Bean Salad


Ingredients : Wing Bean 250 Grams
Tomato 1 Fine chopped
Onion 1 Fine chopped
Peanut 1/2 Cup (Roasted and Crushed)
Coconut Milk 1/2 cup
Lemon Juice 3 Tablespoon
Sugar 1 Tablespoon
Soya Chunks 1/2 Cup
Chillie Garlic Paste
Salt To Taste

Sauce : 1Tomato
 4 Cloves Garlic
 4 Dried Chillie
 Soak the tomato, Chillie and the Garlic in 1/2 cup of Water for some time. Then place them in a food processor and make a smooth fine paste.

Method : Wash dry and  Chop the Wing Bean as shown in the Picture. In a big bowl place the wing bean add the chopped tomatoes and the onion. Now add the chillie Garlic paste ,salt and sugar. Mix them well. Now add the lemon juice ,coconut milk and mix again. At last add the roasted peanut and the soya chunks  and mix well. wing bean salad is ready. You can manage the spicy and sweetness according to your taste.
 
Wing bean salad is very much popular in Thailand. It is mix taste of salty, spicy, sour and sweetness. 



 

Ash Gourd and Stone Apple(Aegle Marmelos) Juice



everyone is familiar with Ash gourd. Stone Apple is known as Bael or Bilba in India. We offer Bilba leaves to lord Shiva.

Ash Gourd contains water and it is very rich in fiber. Ash gourd is low in calories, fat, carbs and Protein. Bael is a very good brain tonic. Bael is used to cure Constipation diabetics and Diarrhea. Together Bael Leaf and Ash Gourd Juice in the morning empty stomach helps us to keep our body healthy and fit. It detoxifies our body . 

Ingredients : One Small ash Gourd

                       One Bael Leaf


Method : Wash the Ash Gourd and the Bael leaf. peel the skin and remove the inner part which contains the seeds. Remove the inner part and the seeds. In a food processor put the peeled ash Gourd and the Bael leaf and Blend and make the juice. If needed add a very little water or make it without water as Ash Gourd is rich in Water. Strain the juice well and drink in the empty Stomach. Don't keep the juice for long time .after making the juice drink it immediately.


After taking for 15 days take a break for some days then again start drinking the juice.it will enhance your digestive system and improve your kidney function.

Pesto Sauce


Ingredients : 2 Cups of Fresh Sweet Basil Leaves
1/2 Cup Extra Virgin Olive Oil
1/3 Cup Pine Nuts
4 Cloves of Garlic
1/3 Cup Grates Cheese(Parmesan Cheese)
1 Tablespoon Lemon Juice
Salt to Taste

Method : Toast the Pine nuts Slightly. remove the stems from the Basil Leaves well. In a food Processor place the Pine nuts Garlic, Olive Oil and the Basil Leaves and continue to blend until the nuts become smooth. Add the Cheese Salt and the lemon Juice Churn again and make a smooth Green Pesto sauce.

Tip : If you don't have Pine nuts no worries you can use walnuts.

If you are not going to use the Pesto sauce right now, Place the sauce in a air tight container and pour enough olive oil on the top of the sauce. Keep in the refrigerator.

Stir Fried Morning Glory


Ingredients: Morning Glory 1 Bunch
                     Garlic 3-4 Cloves
                      green/Red Chilies 3-4
                     1 Tomato long Chopped
                     Oil 1 Tablespoon
                      Soya Sauce

Method: Wash and Chop the Morning Glory as shown in the picture above. Rinse off the water. heat the oil in a pan. coarsely ground the chillies and the garlic. add the chillie garlic paste to the oil. Now add the tomatoes .after 1 minute add the chopped morning glory and add the soya sauce according to the taste. just leave for 2 minutes on the burner and the veggie is ready.

Tip:   after chopping keep the morning glory in the ice water for some minutes.it won't change the colour.   

  If you are a tofu lover u can add tofu to this vegetable.it will taste good.                                                                  



                                                                  
 

Sweet and Sour Mango Salad

Ingredients : Mango 2 (whole) Not very sour
                                     
                          soya Chunks 1 Cup(Fried)

                                   Fried Cashew nuts 1/2 cup

                                  Red chilies 5-6 pieces(Grounded)

Dressings : Sugar 1 teaspoon

                               tamarind a little

                              Chillie Flakes 1/2 Teaspoon

                                Salt to Taste

Method : Make the Juliennes of the mango as shown in the picture above. Mix all the ingredients of the dressing In 2 tablespoon of Water and prepare the dressing. Lastly mix all the ingredients and mix them all nicely. Yummy Mango Salad is ready.

 

 

Khao Phad (Thai stir fried rice)



Khao Pad is a very popular dish in Thailand. Khao Means Rice and Pad/Phat Means Stir-Fried.

Ingredients :Jasmine RICE 2 Cup(Boiled)
Mushroom (Optional)Nicely Cleaned
Tofu (Optional)
Vegetables (Beans, Carrot, Broccoli, Cauliflower, Cabbage, Tomato, Capsicum Spring Onion or any seasonal Vegetable)
Lemon Juice 1 Tablespoon
Soya sauce 1 Tablespoon
Sugar 1Teaspoon
Green Chillie 3-4 Pieces 
Garlic 3-4 Pieces
Black Pepper a little
Salt to taste

Method : Heat the oil in a pan. Make the chillie garlic rough paste. Put the paste into the oil then add the White part of the onion. Keep the springs of the onion for Sprinkle. Add Mushroom and tofu into the oil. Now add the vegetables in a very high flame. add the soya sauce. Stir-fry all the vegetables around 1 minute. Now add the rice and the salt then stir -fry the whole dish until the ingredients blend with each other well. Add the sugar and the lemon juice. taste the dish in this stage. Add more seasonings if required. Lastly add the freshly grounded black pepper. Sprinkle with spring Onion .


Suggestion: Serve with some Salads and Lemon Wedges. Serve hot.

Easy Aaloo (Potato) Methi ki Sabji

Ingredients : Potato 3 Whole
Methi Patta (Phenugreek Leaves) 1/2 Cup
If U Don't have Fresh leaves you can use Kasoori Methi(Dried Fenugreek Leaves)
Oil - 1Tablespoon
Jeera(Cumin Seeds) 1 Teaspoon
Turmeric Powder - 1/2 Teaspoon
Red Chillie Powder - 1 Teaspoon
Dhania Powder - 1 Teaspoon
Amchur(Dry Mango Powder) -1 Teaspoon
Salt To Taste


Method -  First Boil the potatoes. Then peel the skin of the potatoes and cut them. keep the pan in the Burner, Heat the oil.Add the Jeera.when the Jeera began to Pop add the Potatoes. Now add the Salt and turmeric. Stir them Slowly then add the Methi Patta. again Stir the Potatoes. .When the potatoes looks little golden add the coriander powder and red chillie Powder.Atlast add the Dry mango powder and the Sabji is Ready.

Tip : If u Find that There is extra oil in the Sabji you can add little Besan(Gram flour) It will absorb the extra oil and enhances the taste also.

Crispy Yummy Puffed Rice

Puffed Rice is a very popular snack. It is perfect for munching. Very light and easy digestive. Puffed rice has different names in different states. Some of the popular names are Muri, Mudi,Murmura etc. 

Ingredients : Puffed Rice
Mustard oil 2 Tablespoon
Turmeric Powder 1/2 Teaspoon
Red Chille Powder 1/2 Teaspoon
Dry Whole red chillie 4 to 5 Pieces
Some Curry Leaves
Peanuts 1/2 cup
Black Salt 1/2 Teaspoon
Black Pepper 1/2 Teaspoon
Salt to Taste

Method : First put the pan in the burner. Put the oil. When the oil started to heat add the dried red chillie and the Curry Leaves. Then put the Peanut seeds when the peanut seeds becomes little red color add the turmeric powder. Then add the puffed Rice and all the Remaining Ingredients. Slowly slowly mix in the pan. Simmer the Gas .now Taste the murmura if you find it according to your taste then switch off the gas. Keep aside for a  little time. Don't keep in the jar if the murmura is very hot.

Suggestion : If you don't like Mustard oil you can use any other oil which you regularly use for cooking.



 

Nutritious Salad




Ingredients : Cucumber 2 pieces
                      Tomato 4 Pieces
                      Carrot and Beetroot julienne                                                      
                      Chopped Coriander leaves
                     Sun Flower Sprouts
                     Finely Chopped Cabbage
                     Some Very small pieces of Coconut
                     Some Roasted Peanut 

Dressing: Olive oil 1 Tablespoon
                 Lemon Juice 1 Teaspoon
                  Honey 1 teaspoon
                    Salt to Taste

 Method: Take a Salad Bowl and mix all the ingredients.

The dressing is optional. For the change, You can use Mustard oil instead of Olive oil.

Bhindi Khatta (Okra in tamarind Water)

Ingredients : Okra 250 Grams Chopped Long Medium Cut

Tamarind Pulp 1 cup

Gram Flour 2 Tablespoon

Oil 1 Teaspoon

Turmeric 1Teaspoon

Red chillie powder 1 Teaspoon

Jeggery 2 Tablespoon 

Salt to Taste

Seasoning : Mustard Seeds 1 Teaspoon

Whole Red Dry Chillie 4 Pieces

Curry Leaves

Fenugreek 1Teaspoon

Fennel Seeds 1 teaspoon

Method : First put the pan in the Burner, then put some oil ,When the oil heats add all the okra and cover for some minutes. When the okra softens little remove the okra and keep aside. Then in a pan take 500 ml of Water add the tamarind pulp and the Gram Flour. Mix them well .Keep in mind mix it very fine. Now heat the oil put all the seasonings. When the mustard seeds began to Crackle add the tamarind water. then add Turmeric and chillie powder and salt according to your Taste and Jeggery. When the Tamarind water boils Then add the okra and Switch off the Gas and remove the pan from the burner. Yummy Bhindi Khatta(Traditional Name) Is ready.




  

 

 

Okra (Lady Finger) Dry Curry

   Bhindi ki Sabji

 Hello Friends,

  Lady Finger curry is loved by almost everybody. Okra is Nutritious and it has many benefits . Okra is low calorie food and good for digestion also. Ok,today I will show you Okra curry which my kids loved. 


Ingredients : Okra Chopped Round or long
 Tomato 1 chopped
Oil 2 teaspoon
Cumin Seed 1/2 Teaspoon
Turmeric 1/2 teaspoon
Red chillie Powder 1 Teaspoon 
Coriander Powder 1 Teaspoon
Salt to taste
1/2 teaspoon Gram flour(Besan)

Method : First place the pan in the burner .Put some oil ,then add the Cumin seeds when the seeds began to crackle then add the okra. After that add the salt and the turmeric powder then mix them with the help of a spoon or spatula. Cover for very little after 5 minutes remove the cover. then add all the ingredients and again mix them all softly. After the okra becomes little dry add the tomatoes and leave for a very few minutes.
Now the dry okra curry is ready.

Note : You can use Dry mango powder if you don't have Tomatoes.
